Once upon a time, someone gave my sister a Kid's Microwave cookbook. It had some great recipes in it, for example, how to make scrambled eggs (!) And like most of the other cookbooks we had at home growing up, we only ever used the sweet section! I kept the book for awhile but really only so I could have this recipe. We gave the book to the Salvation Army store awhile ago, but I tore out the page with this recipe on it! (Incidentally there is a good recipe for meringues on the other side!!)
This treat is probably a Kiwi (New Zealander) kid's favourite and common at birthday parties. I believe a similar type of thing in America is called a Rice Krispie Treat?! I like to think it's a slightly healthier version of Chocolate Crackles, probably not, but who keeps Kremelta as a pantry staple?! Anyway, it's a quick and easy recipe, great if you have some slightly stale rice bubbles in the cupboard. Also as it's a microwave recipe, it actually can be done by kids! You could jazz it up a little by adding sprinkles or chocolate chips at the end, but to be honest, I actually love it as it is! You could also make individual treats in cupcake cases rather than one big pan too.
100g brown sugar
1 tablespoon honey (any kind)
4 cups rice bubbles cereal
Put the butter, brown sugar and honey in a large microwave proof bowl and heat on high (100% power) for 1 ½ minutes. Remove and stir, and heat on high (100% power) for another 1 ½ minutes. Remove from microwave and stir
Pour in the rice bubbles and stir until well combined and all the rice bubbles are coated
Grease a rectangle baking dish and pour in your mixture. Spread evenly around the pan. Allow to cool then cut into squares.
*NB If you were wanting to add any extra ingredients, like sprinkles or chocolate chips, I'd add these at the end on the top. If you wanted to add in something like coconut, dried fruit or mini marshmallows, then add these at the same time as the rice bubbles to the liquid.
